Kristjan, what are the major food safety challenges for you?
“Early autumn is always the most hectic period because we always get last-minute answers from schools and kindergartens, and once received, we have to act quickly. Very often we have to put HACCP systems together for 10 new places at once within a couple of weeks. On the food safety side, new sites need to prepare all documents including a HACCP plan and license, find new employees, and train them, which is a very time-consuming process. Back in the days, it usually took 2-3 weeks to create a HACCP plan. It is necessary to find all required documents, create risk assessments, identify critical control points, and establish a monitoring system with daily tasks. Sometimes, you don’t know where to start with all the new places coming at once."
